You don't have to have an eight-course dinner every night. A perfectly good meal can be easy: Cook a pot of brown rice. Open a can or two of black beans. Stir in seasoning. Have some vegetables and typical taco-style toppings available. You can make enough rice to have this two nights in a row. The rice takes a bit of time to cook, but you can be cleaning your kitchen or writing a story while it's cooking. You don't have to stand there the whole time. Another good one: Put a piece of fish (seasoned however) in the oven. Pile some greens and chopped onions on a plate. Add a sprinkle of goat cheese and dressing. Drop the cooked fish on top. I make this a LOT and all told, it's about 5 minutes of effort. I very often (in winter, mostly) make a huge pot of minestrone -- which does take around 15 minutes of prep time -- and then eat it for several meals. If you're telling me you don't have 5 minutes a day to cook, I'm going to suggest you do your best to change your life.
