We aren’t even talking about food anymore. This is performance art. As such, it’s outside the grasp of 99 percent of us. I cook good food at home using (mostly) whole foods. What I do is entirely different from what restaurants like this do.
Not paying your workers is exploitation. It feeds income inequality because only privileged people can work for free.
