Tonight’s diner is baked salmon and a huge portion of roasted Brussels sprouts (in olive oil). Very small portion of potatoes because it’s Saturday night. This is typical. I do cook potatoes often because my Dutch husband was raised eating them daily, but I usually skip them or just enjoy a few bites. I don’t eat any sweets or refined carbs.
