Teaching a kid to cook is always a good idea! It's amazing to me how many families don't cook together.
Here's an easy recipe that might fit your needs (or if not, maybe somebody else's here): Sautee a chopped onion, some garlic and a bag of spinach. You can chop the onion but let your child stir the onion in the skillet and then add the spinach and sautee it. Use this to stuff an omelet. Your child can break the eggs and beat them. You will probably be the one to turn it.
Your child can add just enough shredded cheese to make it good. You can roll it or fold it and place it on a plate.
You have protein and veggies all in one delicious, easy and affordable shot. This is a favorite of mine. If you dislike spinach, other veggies can be substituted, like bell peppers or leftover asparagus.
