Pesto is my religion!

Here's what I do: Every fall, I harvest all the basil and make a huge batch of pesto. I place it in gallon freezer bags and lay the bags flat. All winter, I can break off a chunk of frozen pesto and use it in all kinds of ways. Mixed with mayo, it is good for chicken or fish or as a sandwich spread.
