My mother had the utmost contempt for people who didn't even know how to cut up a chicken. I learned early on! But for my money, one of the best ways is to keep the chicken whole and roast it in a big cast iron skillet with a big spring of rosemary inside and some salt, pepper, butter and a trickle of maple syrup drizzled over the top.
