I think it might be that people no longer know how to cook such basic comfort food at home anymore. If you come to my house, you’ll get a pot of soup and a loaf of sourdough bread. Or a chicken roasted on a cast iron skillet with some rosemary shoved where the chicken wouldn’t have liked it. Or some kind of one-dish meal with a ton of garlic. My new favorite thing I’m making after splurging on a new Japanese omelet pan is omelets bursting with enough stuff to make them a full meal. I should write about this pan. It’s exquisite.
